We like hearty meals around here. And when those hearty meals are easy, that makes them even better. This black bean chili is vegetarian, but it’s packed with flavors and the beans provide a good source of protein.
This meal also freezes well, so throw your leftovers in a plastic freezer bag and you’ll have dinner ready for another time.
Ingredients
- 1 medium onion, diced
- 1 garlic clove, minced
- 1 bell pepper, diced
- (2) poblano peppers, diced
- 1 jalapeno, diced
- salt & freshly ground black pepper (to taste)
- 1 tsp chili powder
- 1 tbsp cumin
- 2 cups frozen corn kernels
- 2 cans black beans, drained & rinsed
- 1 can pinto beans, drained & rinsed
- 1 28 oz can tomatoes
Directions
- Add all ingredients to your slow cooker, stir, and cook on low for 6-8 hours. Optional: serve with shredded cheese and cilantro.
