Our Meal Plan This Week

I’m loving this weeks meal plan!  Looking at the pictures now that I’ve made the plan makes me think I was craving a bit of comfort food though.  I was really looking for a few meals that I could make in bulk to share with some families that need a little help.  So we are going big with the chicken casserole and meatballs this week.  If you don’t have folks you need to share with, both meals would also be great to make in bulk and freeze!

I want to add in meatloaf next week, do any of you have a recipe you love?  It’s one thing I’ve never made before but love to order when I see it on a menu.

Monday Super Easy Chicken Broccoli Rice Casserole

 This is one recipe that even someone who can’t cook will love!  You don’t have to precook anything, just dump cut up raw chicken, uncooked rice, and even frozen broccoli together and bake.  It does take over an hour in the oven, but you could have everything in the oven in less than 5 minutes.

Tuesday –  Stuffed Green Peppers

I feel like the classic comment on a recipe post but… we have a lot of poblano peppers that we are going to use instead of traditional green peppers.  As long as you remove the seeds they will work fine, they just won’t stand up so great.  This is one meal that all my girls love!

Wednesday – Chicken Enchiladas @ Church

Week 3 of our Summer Bible Club for kids.  We get dinner and have a once a week VBS night.

If we were at home though, I just grabbed an Old El Paso dinner kit that we could use and make it a simple meal.  They are regularly BOGO and we have coupons, so it means I have everything for around $1 and just need to add the meat.

Thursday – Meatball Marsala

Our one new recipe this week, I saw this at the bottom of a recipe site and immediately wanted to make it.  Here’s hoping it tastes as great as it looks!

Friday – Pizza Night

 It’s been a few weeks and everyone is craving our normal Friday night routine.  We always start with this no-rise dough recipe have pizza in the oven in less than 20 minutes.

Tip: Grab small cans of tomato sauce for around 15-20¢ a can and add basil and oregano (or italian seasoning) to make it taste like pizza sauce.  This is much cheaper than buying pizza sauce or wasting half a jar of spaghetti sauce.

Saturday – Fresh Catch… Fried Fish of the Day

My girls have been begging for a trip to the river (we live near the Broad River in SC) so they are going to catch dinner for us!  I’ve informed them of the plan and they are thrilled at the idea.  I’m no so sure if Dad will be thrilled to clean it all… but we’ll inform him later.  We normally catch small mouth bass that I pan fry.  Probably will grab a bag of sweet potato fries out of the freezer and call it a fish and chips night!

Don’t worry if they don’t catch anything we already have some in the freezer (just don’t tell them).
