Our Meal Plan This Week

I always share my meal plan for the week on a Sunday afternoon facebook live video, but I thought I would get in the habit of also sharing it in a post too.

In general meal planning is a big key to cutting your grocery splurge purchases and to not eating out!  Someone asked me recently if we ever eat out… my goal is only for date night (we also saved on future date nights thanks to a deal at DG this week).

For our meal plan, we focus on what produce we get in our co-op every other weekend and then plug meals around the produce.  It’s a joy to get a huge laundry basket full of vegetables and fruit for $25 and it challenges me to fit in lots of veggies to our meals each week.

Our Meal Plan

MondayCauliflower Soup, Ham and side salad

I have leftover ham from Sunday lunch so this way we get extra protein and gives us something else for picky kids who might not eat much soup.

Tuesday –  Chicken Pot Pie and fruit salad

I go the very easy route and use store bought crusts, rotisserie chicken, 1 bag of frozen mixed veggies and a can of cream of chicken soup.  That will make enough for 2-3 pies and we normally freeze the extras for another meal later.

Note: You can also make shredded chicken to save on the rotisserie chickens.  Because this is being made at the Ronald McDonald House we have to use store bought to meet their health code requirements.  We also have a number of families chipping on the ingredients so that we can serve 30 people.

Wednesday – Red Beans & Rice

Grab a Zatarian’s Red Beans & Rice Mix (on sale bogo at Bi-Lo this week), add a package of sausage.  We also add fresh green peppers and onions and a bit more water to make it more soupy.

Thursday – Steaks, Baked Potatoes, Salad

This is a meal requested by my husband so while I have no steaks in the freezer I will grab a couple on sale just because I love him.

Friday – Pizza Night

We love make your own pizza night and use this no rise pizza dough recipe most weeks.  No one has time to plan 3 hours before dinner to start pizza crusts…

Saturday – Curry Chicken & Rice with fresh green beans

This is using a Tasty Bite Simmer Sauce that was on clearance this week at Lowe’s Foods for $2. Here’s a link to see what it is, but please don’t buy it here it’s crazy expensive.  All you need to do is add the chicken and it’s incredible tasting!

Sunday – Dinner at my Mama’s house!

A rare treat for Mother’s day she is cooking for me.
