If there were any title that I feel should be on my resume, “Master Peanut Butter & Jelly Maker” is definitely one of them.  My youngest child cheers every time she hears that “peanutjelly” sandwiches are on the menu!  My older girls though cringe, they have had enough in their short 6 years already.  So we have started getting creative.

Recent sandwich creations in our house:

          Peanut Butter & Peaches
          Peanut Butter & Honey
          Peanut Butter & Raisins

And the all time classic: Peanut Butter & Bananas

With all our creative genius, we just learned that right now kids ages 6 to 12 (with parents help) can submit their creative sandwich recipes for a chance to win a $25,000 college fund!!

This is actually the 10th anniversary of the contest, so they’re throwing in an additional $10,000 for education funds to the winner.  If you aren’t creative, there is a separate contest for peanut butter fans across America to enter the That’s Why I Choose Jif Essay Contest.  Winners of the essay contest, get to be the judges on the panel for the most creative sandwich!  You get to fly to NYC for the final event in New York, where five kid chefs will contend for the grand prize.

I know most of you could really use $25,000 towards college, so help your little one submit their creative peanut butter recipe on Jif’s website or complete the downloadable entry form available on the website.  You can also check out the official rules on the contest website.

You have another chance to win something right now!  Win an awesome prize pack!!

                menu plans pantry staples

Sometimes we think a good dinner means one that is complicated or has a long list of ingredients.  One of the ways to save on dinner is buy a few key ingredients (veggies & proteins) and then make heavy use of your pantry for flavor and texture (think spices, bread crumbs, mustard etc.). A few fresh herbs go along way over a week’s worth of meals too.

A recipe doesn’t have to be complicated or expensive to taste great and be healthy!
