Overnight oats is one of my favorite easy breakfasts to have on hand. If you’ve never had them before, they are eaten cold after sitting overnight in the fridge. They can be flavored with all kinds of different things, depending on what you enjoy. For this time of year I wanted to try to make a pumpkin flavor. The result was delicious, and I will definitely be making this again! These pumpkin pie overnight oats also fit into a variety of eating plans. You can use zero calorie sweetener, nonfat or plain Greek yogurt, and any kind of milk you enjoy.

Pumpkin Pie Overnight Oats Recipe

To make these overnight oats, you’ll need canned pumpkin, rolled oats, Greek yogurt, milk, sweetener, and cinnamon.

I made three jars at once. This used up one jar of pumpkin. I put 1/2 cup pumpkin and 1/2 cup rolled oats in each jar.

Then add 1/2 cup Greek yogurt. I used low carb, high protein Greek yogurt.

Stir all this together and then add cinnamon and sweetener. Then just fill the jar 3/4 up of the way with milk.

Let sit overnight in the fridge and enjoy the next morning. These are great to eat in the car when you’re on your way somewhere early in the morning!

Pumpkin Pie Overnight Oats

Ingredients

  • 1/2 cup canned pumpkin
  • 1/2 cup Greek yogurt
  • 1/2 cup rolled oats
  • 1-2 tbsp. sweetener
  • 1/2+ cups milk of your choice
  • cinnamon (optional)

Directions

  1. Use 16 oz mason jars for this recipe.
  2. To each jar, add the following: 1/2 cup canned pumpkin, 1/2 cup oats, and 1/2 cup yogurt.
  3. Stir to combine.
  4. Add in sweetener and cinnamon.
  5. Fill each jar with milk until it is about 3/4 full and stir to combine.
  6. Let sit overnight and then enjoy.
