Breakfast is always tricky for me on the keto diet. Time is of the essence, and I don’t want to be tempted by whatever delicious carb-filled option my kids are eating!  Eggs are one of the most common keto breakfast meals, but sometimes I don’t feel like standing at the stove making scrambled eggs for the fifth time this week.  A super fast solution is making a batch of Ham, Egg & Cheese cups and having them in the fridge or freezer to grab and go!

I love these egg cups!  Make them ahead of time and don’t have to think about making breakfast for several days. This is a perfect solution for a quick keto breakfast on the go that is so delicious, they probably won’t last as long as you hope they will!

Quick Keto Breakfast On the Go

Ham, Egg, & Cheese Cups

Ham, Egg, & Cheese Cups


  • 1 dozen eggs
  • 24 pieces thinly sliced ham
  • 3/4 cup cheddar cheese, shredded
  • salt and pepper to taste


  1. Spray or grease a 12 count muffin tin.
  2. Put two pieces of thinly sliced ham in the bottom of each cup, making a muffin liner out of it.
  3. Sprinkle about a tablespoon of shredded cheese into each cup.
  4. Crack one egg into each muffin cup. You can also scramble the eggs first if you prefer.
  5. Season each cup with salt and pepper.
  6. Bake at 400 degrees for 12-15 minutes for runny eggs or 20-25 minutes for firm.

These can be frozen and reheated or kept in the refrigerator. Dress them up by adding green onions or tomatoes to the top.

You could also change up the type of cheese you use—pepper jack would be delicious!
