May is very much a transitional month as many of us have some kind of change to our schedules either already happening or on the horizon! I planned a very easy month of meals in my May 2024 monthly meal plan, because I know what my family likes and I want to be able to throw dinner together without thinking too much about it. We’re having some form of tacos every week, but we’re also going to break out the grill and celebrate Mother’s Day and Memorial Day!

I did throw in a few new recipes this month – lime dragon noodles and a peanut chicken dish. I always like to try new things every once in a while. Sometimes it’s a flop (not because the recipe isn’t good; just because enough people in my house don’t like it!), but sometimes we find a crowd pleaser that makes it into the regular rotation.
