One of my favorite things about fall is pumpkins. I love the cooler weather and I love all the fun fall activities, but I just love pumpkins. I like decorating with pumpkins and I love to cook with pumpkin. Pumpkin is so versatile when it comes to cooking and baking. It can add some sweetness and texture, but it can also replace egg in recipes, making it great for those dealing with allergies and food intolerances. It can also be eaten hot or cold—I love making muffins with pumpkin as an ingredient, but I also put pumpkin in my smoothies and my overnight oats!
